Homemade Ashwagandha Gummies: Why Are They So Sticky?

Hey y'all! I've been trying to make my own ashwagandha gummies at home to save money, but my first batch is a sticky mess! I used 2 tbsp gelatin powder, 1/4 cup cold water to bloom, and 1 cup of POM juice. Heated gently, added my ashwagandha powder (about 1/4 cup) and let it set in the fridge for 4 hours. They never firmed up... just like a blob. What went wrong? Help a broke student out!

Hey @UpliftUrsula521! I'm no gummy pro, but I've tinkered with agar instead of gelatin for my kids (vegan). Gelatin can be finicky with acids - POM juice is acidic, that might break it down. Also, did you make sure the temp was below boiling? If it gets too hot, it can lose its gelling power. Maybe use red lime gelatin mix? Saves money and you get flavor too. But maybe you need more gelatin - like 3 tbsp for that juice? Also, try refrigerating overnight.

As a research librarian, I've read a lot about gummies. Two common reasons for sticky failures: 1) Not enough gelatin relative to liquid. The standard ratio is often 1 tbsp per 1/2 cup of liquid, so for 1 cup you'd need 2 tbsp... BUT juice has water content and sugar, and the ashwagandha powder might act as a solid that competes with the gelatin network. Also, did you let it bloom? Letting it sit for 5-10 min is key. Another thing: lipids or certain extracts can inhibit setting. If you're using an oil-based extract, that can be an issue. Try using a water-soluble ashwagandha powder. Also, make sure you didn't use hot water directly - 60-70°C is max. Hope that helps!

Thanks guys! Yeah, I used an extract that's alcohol-based, maybe that's the culprit. HealthHacker, that makes sense about the lipids. I'll try the agar route like RootRose suggested, but also maybe experiment with a different juice and more gelatin. I'll update if I get it right. Budget life can't afford fancy gummies every month!
