Homemade B12 Gummies: Turned into a Gelatinous Blob 😩 Help!
So I tried making my own B12 gummies last night. Used 2 tbsp gelatin, 1/4 cup cold water to bloom, then added 1/2 cup warm apple juice and 2000mcg of methylcobalamin powder. Stirred it all up, poured into molds, and now it's just a big, rubbery mess. Not even close to gummy bear texture. What did I do wrong? Any night shift workers here who've tried this?
Dude, I feel you. I've been there. Your ratio seems off. Too much gelatin for the liquid. Try 1 tbsp gelatin to 1 cup liquid. Also, did you heat the mixture enough? Pour it into molds while it's still warm, then fridge for at least 2 hours. And don't use apple juice – it has enzymes that break down gelatin. Use water or a clear juice like white grape. I add a little citric acid for sourness, but that might mess with the gelatin too.
Hate to break it to ya, but gelatin gummies are garbage for bioavailablity. Try agar agar instead – it's vegan and holds up better. For B12, I'd suggest sublingual drops anyway. But if you insist: 1 tsp agar, 1 cup liquid, boil for 2 min, add your powder, pour, set at room temp. Also, methylcobalamin degrades with heat, so add after it cools a bit. Oh, and you need an emulsifier like lecithin if you add oils. Peace out.
Wait, are you guys using sugar? I'm paleo so I avoid refined sugar. I tried honey once and it crystallized making the gummies grainy. Also, B12 is destroyed by heat so I feel like homemade gummies are a waste. I just take my B12 powder straight under the tongue. But if you're set on gummies, maybe try a recipe with grass-fed gelatin and monk fruit. Let us know if you find a working ratio.
