Hey guys, I've been trying to make my own biotin gummies at home using gelatin and biotin powder. My first batch came out super rubbery and tasted awful, like fishy. Any tips on how to get a decent texture and flavor? I used 2 tbsp gelatin to 1 cup juice, and 5000 mcg biotin. Also, is it better to use agar instead?

As a vegan, I say ditch the gelatin - it's made from animal bones! Go with agar-agar. For a better texture, you need to boil the agar properly and let it set at room temp before chilling. Also, make sure you measure accurately - too much agar and you'll get bricks, too little and they'll be slime. I've had success with 1 tsp agar per cup of liquid. I've been making gummies for years, and the key is to not overheat the biotin. If you use high heat, it breaks down and smells/tastes funky. I add the biotin after the gelatin has dissolved and the mixture has cooled slightly - just whisk it in. Also, I use a silicone mold and I don't overdo the gelatin. For 1 cup liquid, I use 2 tbsp gelatin but I also add 1 tbsp of honey or maple syrup for sweetness and to balance the flavor. If your gummies are rubbery, it might be because you let them sit out too long before refrigerating. Try pouring quickly and chilling for at least 2 hours.
