Homemade Biotin Gummies - Help With Texture!
Hey all, I tried making my own biotin gummies using gelatin and biotin powder, but they came out way too hard and kinda grainy. I used 2 tbsp gelatin to 1 cup juice, plus 1000mcg biotin. Heated gently but still a mess. Any tips for a smoother texture?
I feel your pain! I've been there. Try blooming the gelatin in cold water first (about 1/4 cup per tbsp of gelatin) for 10 mins, then slowly heat it. Also, use a lower heat and stir constantly. The graininess might be from undissolved biotin powder - maybe mix it with a little warm water before adding.
Texture is everything! As a foodie, I'd suggest using agar instead of gelatin for a more jelly-like chew. Agar sets firmer, so use 1 tsp per cup of liquid. And add a pinch of citric acid for tang. For biotin, make sure it's micronized powder. Also, try adding a bit of honey or maple syrup for sweetness and to help dissolve.
Thanks for the advice! I'll try blooming the gelatin and using lower heat. Ivy, does agar have a weird taste? I want them to taste good since I have to take them daily.
Agar is pretty neutral, but it can be slightly seaweed-y if you use too much. Pair it with strong fruit flavors like cherry or orange, and add a little extra sweetener. I've made agar gummies with hibiscus and they were delish! If you stick with gelatin, make sure to add some lecithin as an emulsifier for smoother texture.
