Homemade Biotin Gummies - Need Recipe Help!
Hey all! I tried making my own biotin gummies today using gelatin and some biotin powder I bought online. Followed a recipe I found, but they came out super sticky and never set properly. They're like gooey blobs! Any tips on how to get them to firm up? I used 1 cup of juice, 2 tbsp gelatin, and 2000mcg biotin. Did I use too much juice? Or is it the biotin powder messing with the set?
Hey Oliver! I'm a med student and have done some DIY gummies myself. The ratio of gelatin to liquid is crucial. For a firm gummy, you usually need 1 part liquid to 1 part gelatin (by weight), but 1 cup juice to 2 tbsp gelatin isn't enough. I'd try 1/2 cup juice to 2 tbsp gelatin, and make sure you let it bloom properly (let the gelatin sit in cold liquid for 5-10 mins before heating). Also, if you're using a powder, sometimes it can affect the gel, but shouldn't if it's just biotin. Try heating the mixture gently and then pour into molds immediately.
Not to be a downer, but are you sure you need to make your own? I know biotin gummies are cheap at the store. But if you're determined, I'd add some agar agar instead of gelatin. It sets firmer. Also, did you add any citric acid? Sometimes that helps with setting, but it can also break down gelatin. And I've heard that too much sugar can make them sticky. Just a thought.
Hey, I'm always on the road so I've made my share of gummies for my keto diet. Your issue might be the pH. If your juice is too acidic (like orange or pineapple), gelatin won't set well. Try using a non-acidic base like apple juice or coconut water. Also, you might have overheated the gelatin, which destroys its gelling ability. Keep the temp low. And if they're sticky, dust them with some cornstarch or use a bit of coconut oil on the molds.
