Homemade gummy fail - help! Too rubbery or not setting?

So I tried making my own vitamin gummies with gelatin and some powdered B-complex. First batch turned into a rubbery mess, second batch never set. I used 2 tbsp gelatin to 1 cup juice + powder. Any tips? I'm starting to think these DIY gummies are just a fad.

Dude, you gotta bloom the gelatin first! Mix it with cold liquid, let it sit 5 min, then heat it up slowly. Also, too much gelatin makes rubbery gummies, not enough won't set. Try 1 tbsp per cup and see if that works. I use agar for vegan ones - different ratios though.

Are you using juice with sugar? Sugar messes with gelatin setting. On keto I use stevia and it works fine. Also, you gotta refrigerate for at least 4 hours. Patience, bro. If all else fails, try agar-agar but don't boil it too long.

Thanks! I'll try blooming next time. And EarthElias, I used apple juice so yes sugar. Maybe I'll use water with flavoring instead. Btw Bob, do you know if vitamin powders change the pH enough to mess with gelation?

pH can be a thing - gelatin works best in slightly acidic, but too much acid can break it down. Vitamin C powder might cause issues. I'd mix the powder with a little warm water first to dissolve before adding. Good luck, you got this!
