Hey everyone, I tried making my own collagen gummies using beef gelatin and a collagen powder I got from a health store. I followed a basic recipe: bloom gelatin in cold water, heat it up, add the powder and some juice. But they came out super gluey and rubbery, not like the chewy store-bought ones. Any tips on ratios or process? Should I use agar instead?

I've been there! The issue is probably overheating the gelatin after adding collagen—collagen can denature and get weird. Try mixing your collagen powder with the dry gelatin before blooming, then use a lower temp and stir gently. Also, gelatin needs sugar to set softer, maybe add a little honey or maple syrup? Agar gives a different texture, more jelly-like, so depends what you want.

Nothing beats store-bought from a reputable brand. But if you insist on DIY, make sure you're using hydrolyzed collagen (peptides), not undenatured. And don't skip the citric acid or lemon juice—it helps with gel strength. Also, let them set in the fridge for at least 4 hours. You might've added too much liquid.

Thanks guys! I'll try the dry mixing and lower heat. I did use collagen peptides, so that's good. RootRose, I used unsweetened juice, maybe that's why they're tough? I'll add some maple syrup next time. Vince, you're right about the citric acid, I forgot it. I'm stubborn though, I want to nail it myself haha.

Haha, keep at it! Also, if you're using molds, spray them with non-stick spray or oil lightly. And don't boil the mixture—just warm enough to dissolve. Post an update when you try again!
