Help! My elderberry gummies turned into a slime monster - need recipe rescue!
Hey all! So I'm a digital nomad currently parked in a van in Oregon, and I've been trying to make my own elderberry gummies for immune support. I'm using gelatin (Knox) and a elderberry powder I got online, plus some vitamin C powder. First batch was a total fail - they never set, just stayed gooey. I think I added too much liquid? Also, does agar work better for a vegan version? I'm not vegan but curious. Any tips? I'm wasting so much powder and it's not cheap! Also, how do you get the dosage right? I don't wanna OD on elderberry lol. Thanks!

Typical ratio for firm gummies is about 1 tbsp gelatin per 1/4 cup cold liquid to bloom, then add hot liquid. But if you're adding powders, they can interfere. Also, vitamin C is acidic and can weaken gelatin gels. Agar is a different beast - it sets at higher temps and gives a more brittle texture, not chewy. For agar, you need to boil it for a few minutes to activate. As for dosage, elderberry is generally safe but concentrated powders can be potent. Check the label for suggested serving. Don't guess! I'd start with 1/2 tsp per batch and adjust. Also, consider using a mold with known volume so you can calculate per gummy. Good luck!

EcoEllen - I'll try the syrup method next time, sounds more natural. One more question: how do you store them? I'm in a van so no fridge. Will they go bad? I was thinking of dehydrating them a bit? Any advice?
