So I tried making fiber gummies at home using psyllium husk powder and gelatin. Followed a recipe I found online, but they set into a rock-hard mass. Not chewy at all. Did I use too much gelatin? Or is psyllium the problem? Any tips?

Oh, I feel your pain! I tried agar-agar once and it was a disaster – turned into a weird jelly sludge. I've had better luck with a mix of gelatin and a little bit of fruit juice. But psyllium is tricky – it absorbs a lot of liquid. Maybe you need to decrease the gelatin and increase the liquid? Or use a different fiber source like inulin? Have you tried that?

I've been making my own gummies for a while – I use a recipe with unflavored gelatin and a bit of agar for 'snap'. The key is to bloom the gelatin properly and not over-boil. For fiber, I use a soluble fiber like Benefiber (wheat dextrin) – doesn't mess with the texture much. Psyllium can get gummy and thick. Also, make sure you're using enough liquid – like 1/2 cup for every tablespoon of gelatin.
