Homemade Fiber Gummies – keep turning out like rubber?

Alright folks, I'm trying to make my own fiber gummies with gelatin and psyllium husk powder. First batch turned out like chewy rubber bands. Second batch I tried agar instead – now I've got a weird jelly that falls apart. Any tips on ratios? I'm following a recipe I found on a keto blog but it's not working.

Oh man, I've been there! For gelatin, you gotta bloom it in cold water first. And psyllium can be tricky – it absorbs a ton of liquid. What's your ratio of liquid to gelatin? Usually 1 tbsp gelatin per 1 cup liquid works for me. Agar sets differently too, need to boil it longer.

Don't use psyllium in gummies, it'll always give you that weird texture. Try soluble corn fiber or inulin instead. Plus you need a mold with some give – silicone works best. And make sure your vitamin powders are micronized or they'll clump. I'd share my exact recipe but it's part of my startup's IP, lol.

@DewyDaphne316 I used 2 tbsp gelatin to 1.5 cups water, plus 3 tbsp psyllium. Maybe I used too much psyllium? @PurePete704, what's your base liquid? Can I just use water or do I need juice? I want low carb.

Yup, way too much psyllium! For 1.5 cups liquid I'd use 1 tsp psyllium max, if any. And you can use water but add some flavor extract and stevia. Also try reducing the gelatin to 1.5 tbsp. Let it set in the fridge for at least 4 hours.
