Hey everyone, I tried making my own gummy vitamins at home inspired by GOLI gummies but using gelatin and some vitamin C powder I had. Followed a basic recipe online but they came out super rubbery and hard to chew, not soft like store-bought. Anyone have tips on ratios or if I should use agar instead? Also wondering if heat destroys the vitamins... help!

Ugh, I feel you! Tried this last month between meetings - total fail. Mine were a sticky mess that wouldn't set. I think the temp matters a lot? As a busy pro, I'd say maybe just buy GOLI lol. But if you're determined, I read that adding a bit of citric acid helps with texture and shelf life. Also, maybe less gelatin? I used 2 tbsp per cup of juice and it was too much.

Ooh fun topic! I've made tons of batches. YogurtYuri284 - rubbery usually means too much gelatin or overheating. Try 1.5 tbsp gelatin per cup liquid max, and don't boil it! Heat can degrade some vitamins (like C), so add powders AFTER cooling slightly. Agar gives a different texture - more firm and melts faster. I blend mine with a touch of honey and lemon juice for flavor. What liquid did you use?

Thanks both! ZenZoe - citric acid tip is good, I'll try that. GummyGuru123 - I used plain water and a little orange juice, heated to dissolve gelatin then added the vitamin powder while still hot... oops. So I should cool it first? Also, do you think using fruit puree instead of juice works better for texture? I have some berry pics from my garden last week lol.

Yes, cool it to like 160°F before adding vitamins! Fruit puree can work but might need more gelatin since it's thicker. Strain it if seedy. For a GOLI-like chew, I do: 1 cup juice/puree, 1.5 tbsp gelatin, 1 tsp citric acid, vitamins added warm (not hot), pour into molds and fridge 2 hrs. Share pics if you try again!
