Homemade GOLI-style gummies: Help with gel setting!

Hey everyone! I'm trying to make my own gummy vitamins similar to GOLI, but my batch came out like jelly soup. I used agar agar, vitamin B12 powder, and some fruit juice. How do I get that firm, bouncy texture? Any tips?

Oh man, I feel your pain! I tried with gelatin once and ended up with rubbery gummies. Maybe try using a mix of gelatin and agar? I heard that GOLI uses pectin. Also, don't overheat the mixture or add acids like citrus before it sets. Hope that helps!

As a retired nurse, I'd advise checking the ratio of gelling agent to liquid. For agar, it's usually 1 tsp per cup of liquid. Also, vitamins can affect gel strength. Make sure your powders are fully dissolved. You might need to simmer it a bit longer. Good luck!

Thanks both! I think I used too much liquid. @WaterWillow233, I'll try that ratio. @SproutSid867, pectin sounds like a good alternative. Should I add sugar or can I use stevia? And how to keep the gummies from spoiling?

I use a bit of honey or maple syrup for sweetness, but stevia should work. For preservation, maybe add a touch of vitamin C or store them in the fridge. I've also seen people use a few drops of grapefruit seed extract. Let us know how it goes!
