DIY Gummy Disaster: Need Recipe Help!

Hey all! I tried making my own gummy vitamins with gelatin and vitamin C powder, but they turned into a rubbery mess. Used 2 tbsp gelatin, 1/4 cup water, and 1 tsp powder. Heated gently but it clumped. Any tips? I want to avoid extra sugars.

I've been there! Your gelatin-to-liquid ratio might be off. Try 1 tbsp gelatin to 1/2 cup liquid (including juice or water). Also, make sure to bloom the gelatin in cold water first for 5-10 mins, then gently heat. Did you add any citric acid? That can mess with setting.

Sugar-free is tricky! I use agar instead of gelatin for a vegan option. For agar, use 1 tsp powder to 1 cup liquid, boil for 2 mins, then pour fast. But it sets at room temp. Also, vitamin powders often have fillers that affect texture. Maybe try a liquid vitamin concentrate?

Thanks! I didn't bloom the gelatin – probably why it was clumpy. I'll try Indigo's ratio. Olivia, how does agar taste compared to gelatin? I'm open to trying it.

Agar gives a firmer, more brittle texture – not as chewy. I use it for jellies. Also, if you want chewiness, add a little tapioca starch. Just experiment small batches!
