DIY Magnesium Gummies: My batch turned into a rubbery mess! Help!

Hey everyone! I'm trying to make my own magnesium gummies at home because store-bought ones are pricey and I want to control the dosage. I used gelatin (Knox) and magnesium citrate powder. Followed a recipe I found online: 1 cup fruit juice, 2 tbsp gelatin, 1 tbsp magnesium powder. But when I poured the mixture into molds, it started setting too fast and got all clumpy. Now they're super rubbery and taste kinda chalky. What did I do wrong? Any tips for a smooth texture? Also, how much magnesium powder should I actually use per gummy? I don't wanna overdose. Thanks!

Hey FloraFinn847, I've been making keto gummies for a while and I feel your pain. The clumping is probably because your magnesium powder isn't fully dissolved. I always dissolve my powder in warm (not hot) water first, then mix with the gelatin. Also, if you're using gelatin, make sure it's fully bloomed before heating. And stir constantly! For magnesium, I use magnesium glycinate because it's gentler on the stomach. I aim for about 100mg per gummy. But yeah, check with your doc first. Good luck!

But the key is to use a syringe or dropper to fill molds quickly before it sets. Also, you might want to add a little honey or stevia to mask the chalky taste. And yeah, don't overdo the magnesium. I wouldn't go over 200mg per gummy unless you know your tolerance. Personally, I take 400mg total daily, so I make each gummy 100mg and take 4. Works for me. Keep experimenting!

Thanks for the tips, everyone! I'll try blooming the gelatin and dissolving the magnesium first. I'm using citrate, but maybe I'll switch to glycinate. And I'll definitely use a dropper. One more question: how do you store them? Fridge or room temp? I don't want them to mold.
