DIY Magnesium Gummies: My batch turned to Jell-O slime!

Hey everyone, first time making my own magnesium gummies at home. I tried using gelatin with magnesium glycinate powder and some fruit juice. Followed a recipe online but instead of firm gummies, I got a goopy mess. Any ideas what went wrong? I used 2 tbsp gelatin to 1/4 cup cold water, let it bloom, then heated with 1/2 cup juice and 1 tsp of powder. I didn't add citric acid or anything. Help!

Sounds like you might have used too much liquid or not enough gelatin. I've made these a ton for long runs. Rule of thumb: 1 part gelatin to 3 parts liquid by volume. Also, make sure you simmer (not boil) after adding gelatin, and pour into molds quickly. If they're still slimy, you could add agar agar, but that changes texture. Also, magnesium powder can break down gelatin if it's too acidic, so check pH.

I had the same issue when I tried! Turned out I didn't let the gelatin bloom long enough. Also, don't use pineapple or kiwi juice – they have enzymes that break down gelatin. Stick to citrus or berries. And if you're using magnesium citrate, it's more acidic; I've heard you need extra gelatin. Maybe try adding a bit of ascorbic acid to help set? Or use more gelatin next time.

For me, the key is to use a candy thermometer. Heat to around 115°F (46°C) but no higher, then add the magnesium powder and stir well. Also, you might want to let them set in the fridge for at least 4 hours, not just on the counter. And if they're still sticky, you can dust them with some cornstarch. But my real secret: add a little sunflower lecithin to help the powder mix without clumping.

Thanks everyone! I think I'll try less juice, let the gelatin bloom longer, and use lemon instead of pineapple. Also, I'll check the temp. Do you think a little honey would help too? Appreciate the tips!
