Homemade Magnesium Gummies – Keep Falling Apart?
Hey guys, I'm trying to make my own magnesium gummies at home because store-bought are expensive. I used gelatin, magnesium citrate powder, and a bit of stevia. They set fine in the fridge but when I take them out they get all sticky and fall apart within an hour. Any tips? Using about 2 tbsp gelatin per cup of liquid.
Check your gelatin bloom time! You gotta let it sit in cold water for 5-10 min before heating. Also, try adding a little citric acid or lemon juice – it helps with texture and preserves them. Don't overheat the gelatin or it'll lose strength.
I had the same issue. Turned out I wasn't using enough gelatin. Try 3 tbsp per cup. Also, make sure you're using a candy thermometer – temperature matters. Keep the mixture under 180°F. And let them dry at room temp for 24h after unmolding before storing.
Thanks! I'll try adding more gelatin and letting them dry out. Do you store them in the fridge or just airtight at room temp? I'm worried about them going bad without preservatives.
Fridge for sure if you're not using preservatives. But they'll last 2-3 weeks. If you want longer shelf life, store in freezer. Just pop one out when needed.
