Homemade Melatonin Gummies – They Came Out Like Rubber!
So I tried making my own melatonin gummies using gelatin and some powder I had. Followed a recipe online but they turned out super tough and rubbery. Used 2 tbsp gelatin to 1/2 cup juice. Any tips? I want them soft like store bought.
Hey Xenon! The rubberiness is likely from too much gelatin or not enough liquid. For a softer texture, try 1 tbsp gelatin per cup of liquid. Also, make sure you bloom the gelatin in cold water first, then heat gently. Agar might give a firmer set but it's more finicky. What's your source for melatonin? Pure powder or premade?
I add a little fruit juice and some honey to mask the taste. Also, I use less gelatin than the recipe says – like 1.5 tbsp for 1 cup. Another thing: don't boil it, just warm it. And pour into molds quickly. Let them set in fridge for at least 4 hours. My first batch was like hockey pucks, lol.
Check the pH of your liquid. Too acidic (like lemon juice) can break down gelatin. I use coconut water or apple juice – neutral pH. Also, if you use agar, boil it for 2 mins and let it cool to 140F before adding the melatonin powder to avoid degrading it. Hope that helps!
