DIY gummies turned into a sticky blob – help!
Tried making my own multivitamin gummies using gelatin and a powdered multi from bulk store. Followed a recipe online but they came out like rubber cement. What am I doing wrong? Used 2 tbsp gelatin, 1/2 cup water, 1/4 cup powder. Help!
Probably too much powder. Those vitamin powders have fillers that mess with the texture. Also, sugar-free? If so, you need to adjust the liquid. Try 1 tbsp gelatin per cup of liquid, and reduce powder to 2 tbsp. Heat gently, don't boil.
I use agar agar because my kids are allergic to gelatin. But agar sets firmer. For vitamins, I mix them into fruit puree first. Your ratio seems off. Maybe try 1 tsp agar per 1 cup liquid, simmer 5 min, then add powder off heat.
As a runner, I need quick energy but homemade gummies never work for me either. I've found that using unflavored gelatin (Knox) and adding a bit of citric acid helps with texture. Also, refrigerate for at least 4 hours. Your batch might need more time.
