Homemade gummy vitamins - why are they turning into rubber?

Hey everyone! I tried making my own multivitamin gummies today using gelatin, vitamin C powder, and some magnesium. Followed a recipe I found online, but they came out like rubbery erasers! Not squishy at all. What did I do wrong? Any tips for getting that soft gummy texture?

Oof, I feel you! I tried that once and my kids refused to eat them lol. I found that too much gelatin is a common culprit. Also, if you added vitamin C powder, that can break down the gelatin. Maybe try using less gelatin or add a bit of citric acid? Also, make sure you don't boil the mixture too long. What recipe did you use?

Honestly, I'd just stick to store-bought gummies. Homemade ones are never as good, and you risk the vitamins degrading from heat. But if you must, try using agar instead of gelatin. It's more stable and plant-based. Also, measure by weight, not volume. And don't expect them to be perfect - they're natural!

I'm not a pro but I make them for my pre-workout. Key is to let the mixture cool a bit before pouring, and use a silicone mold. I also add a little honey for texture. Maybe your mixture got too hot? I've had that happen when I rushed it. Also, are you using a high-quality vitamin powder? Some have fillers that mess with the set.

As a yoga instructor, I always tell my students to listen to their bodies - and their gummies! Haha. But seriously, texture issues often come from the type of gelatin. Try a low bloom strength gelatin. Also, if you're using an acid like vitamin C, let the gelatin bloom first in cold water, but don't add the acid until after it's dissolved. Hope that helps!

Thanks everyone! I'll try again with less gelatin and maybe agar. I didn't think about the acid. Hopefully next batch is edible! 😅
