Homemade multivitamin gummies turned into goo? Help!
Ok so I tried making my own multivitamin gummies at home using gelatin and a powdered multivitamin mix. I followed a recipe from a blog but they came out super sticky and never set properly. Any tips on ratios or technique? I used 1 tbsp gelatin to 1/2 cup water and 1 scoop powder. Heated it but maybe too hot?
Hey! I've been there. First, check the temp – above 185°F can degrade gelatin. Also, try blooming the gelatin in cold water first. Your ratio might be off: for firm gummies, use 2 tbsp gelatin per 1/2 cup liquid. And are you using silicone molds? They help a lot. Maybe try adding a little citric acid for tang and to help set?
As a vegan, I use agar agar instead of gelatin. Agar sets firmer and doesn't need refrigeration. Try 1 tsp agar per 1 cup liquid. Bring to a boil, then simmer 2 min. But heads up – vitamin powders can be gritty. Dissolve them in a bit of warm water first. Also, avoid high heat with vitamin C – it degrades. Good luck!
Thanks both! I think I overheated the mixture – it was bubbling. Also, I didn't bloom the gelatin. Will try again with your tips. @NectarNina516, does agar work with fruit juice? I want to add some flavor without sugar.
Yes, agar works with juice! Just be careful with acidic juices (orange, pineapple) – they can weaken the gel. I'd use apple or grape juice, and maybe add a little lemon juice for flavor after cooking. Also, agar needs to fully dissolve, so boil it well. Post your results!
