DIY NAC gummies turning into a sticky mess? Help!

Hey everyone! I tried making my own NAC gummies using gelatin and vitamin powder, but they turned into a sticky goo that fell apart. I used 1 tbsp gelatin to 1/2 cup water, added 500mg NAC powder, and some stevia. Heated gently, poured into molds, refrigerated overnight. What went wrong?? Any tips for a firmer gummy?

Hey, your ratio might be off. For keto-friendly stuff, I use agar agar instead of gelatin (more stable, no carbs). Try 1 tsp agar to 1 cup liquid, boil it for a couple mins, then add your NAC. Also, NAC is acidic so it might break down gelatin. Add a pinch of baking soda to neutralize. Worked for me!

Cheapest fix: add more gelatin! I use 3 tbsp per cup of water for firm gummies. Also, you gotta bloom the gelatin in cold water first (sprinkle over 1/4 cup cold water, let sit 10 mins). Then heat slowly. And don't boil it! NAC powder can be clumpy, so dissolve it in a little warm water before mixing. My batch cost me like $5 total.

I'm all about precision. Get a digital thermometer – keep your mixture between 120-130°F when adding NAC. Too hot and it degrades. Also, use a silicone whisk to avoid air bubbles. I use a sous vide to hold temp, but even a candy thermometer works. For mold release, spray with lecithin oil – game changer.

From my research, NAC is heat-sensitive and can lose potency. Consider adding it after the gelatin has cooled to about 100°F. Also, check your pH – NAC is acidic, which can prevent gelatin from setting. Adding a tiny bit of sodium citrate (like 1/8 tsp) can buffer it. I've had success with 2 tbsp gelatin per 1 cup liquid, plus 1/2 tsp agar for extra hold. Let them set in the fridge for at least 4 hours, and don't skip the de-humidifier if you're in a humid climate.
