Help! My homemade NAC gummies turned into a sticky mess
Hey everyone! I tried making NAC gummies for the first time using gelatin and NAC powder. I used 1 tsp gelatin, 1/4 cup cold water, then heated and added 500mg NAC. Poured into silicone molds and refrigerated for 4 hours. They came out super sticky and wouldn't hold shape! Did I use too much water? Not enough gelatin? Should I try agar instead? Any tips would save my sanity!
Oh honey, I've been there! The struggle is real. Gelatin can be finicky with powders. Try blooming the gelatin in cold water first (like 10 mins) before heating. Also, NAC might be acidic and break down the gel. I've heard people use a bit of lemon juice or citric acid to adjust pH? But also, are you sure you want to mess with NAC? My doc said supplements in gummy form can degrade quickly. Just a thought.
Thanks Holly! I did bloom the gelatin for about 5 mins... maybe not long enough. And the pH thing makes sense, I'll look into that. As for degradation, I'm just making a small batch for daily use, so hopefully it's fine. Have you tried agar? I've heard it's more stable but sets differently.
Oh dear, I remember when I tried making gummies for my grandkids, what a mess! 😂 I second the pH issue. Also, make sure your water-to-gelatin ratio is right. I use Knox gelatin and follow the Knox recipe but sub some water with juice. For powders, I dissolve them in a tiny bit of warm water before mixing. Maybe try 2 tsp gelatin next time? And don't forget to sprinkle gelatin over cold water, not pour water over gelatin. Good luck!
