DIY Probiotic Gummies - Failed Batch Help!

Hey everyone! I tried making my own probiotic gummies at home using gelatin and some probiotic powder I bought. I followed a recipe I found online, but they turned out super rubbery and the texture is awful. Also, they smell a bit funky. Any tips on what went wrong? I used 2 tbsp gelatin, 1/2 cup water, 1/4 cup honey, and a scoop of probiotic powder. Any help would be awesome!

Hey! The rubbery texture is likely because you used too much gelatin. I'd suggest reducing to 1 tbsp per cup of liquid. Also, make sure you're not boiling the mixture after adding probiotics - heat kills them! Let it cool to around 100°F before adding the powder. That might help with the smell too. Good luck!

What SolarSam said. But also, are you using gelatin or agar? If you're using gelatin, it needs to 'bloom' first in cold water. And don't add honey if it's raw - heat destroys beneficial enzymes. For a better texture, try using agar instead, it's more stable. And you might want to add a bit of citric acid or lemon juice to balance the taste.

I've had similar issues. Turns out, the probiotic powder I had was mixed with a filler that caused clumping. Make sure your powder is pure and doesn't have magnesium stearate or something. Also, if you're using a silicone mold, make sure to grease it lightly to get them out easily. And don't skip the refrigeration time - at least 4 hours. Let us know how it goes!
