DIY Probiotic Gummies: Help! My Batch Melted into Goo

Hey everyone! I've been trying to make my own probiotic gummies at home using gelatin and my favorite probiotic powder. I followed a recipe I found, but my gummies came out all gooey and never set. I used 2 tbsp gelatin, 1 cup juice, and 1/4 cup honey – boiled it and everything. What am I doing wrong? Any tips for getting them to hold their shape?

Oh honey, I feel you! First, make sure you're blooming the gelatin in cold water or juice for at least 5-10 minutes before heating. That's key! Also, you need enough gelatin – for a firm gummy, I use 3-4 tbsp per cup of liquid. And don't boil it too hard, just until it's dissolved. Low heat and stir! Also, did you add the probiotic after it cooled a bit? Heat can kill the good bacteria. I usually let the mixture cool to around 110°F then stir in my powder. Hope that helps!

Ha! Reminds me of my first attempt at 'jello shots' back in college – same goo problem! But seriously, Agar is your friend if you want a firmer set that doesn't melt at room temp. Gelatin can be iffy with acidic juices (if you used citrus, that breaks it down). For agar, you need to boil it for a couple minutes to activate. And man, the texture is a bit different – more like gummy bears. But ensure you don't add too much probiotic powder as it can affect the setting. I'm a total nomad, so I've tried gummies on the go! For me, the key is a silicone mold – it pops out easier and doesn't stick. Also, I found that using a little bit of citric acid helps with setting, but don't overdo it or it's sour. And if your mix is still too liquid, pop it in the freezer for 10 minutes to speed up setting, but be careful – it can cause ice crystals if you leave it too long. Also, check your probiotic – some have fillers that make them not set. I buy a brand that's pure powder. What did you use?
