DIY Probiotic Gummies - Need help with squishy texture!
Hey everyone! I tried making my own probiotic gummies at home using gelatin and a vitamin powder, but they came out too soft, almost like jelly. I used 2 tbsp gelatin, 1/2 cup water, and 1/4 cup of vitamin C powder. Any tips to make them more gummy? Should I use agar instead?
Hey @HealthHacker753, gelatin vs agar is a big deal. Gelatin gives a softer, melt-in-your-mouth texture, while agar is firmer and sets at room temp. If you want a chewier gummy, try increasing gelatin to 3 tbsp, and add a little honey or maple syrup (1 tbsp) to help bind. Also, let them set in the fridge for at least 4 hours, not just 1. I've been there - first batch was a mess. Experiment, my friend!
Oh, this brings back memories! I used to make gummies for my kids back in the day. The secret is to bloom the gelatin in cold water first, then heat it gently without boiling. Boiling kills the gelatin. Also, vitamin powders can affect the texture. Try mixing the powder with a little water before adding to the gelatin. Good luck!
Thanks for the tips! I'll try the agar route since I'm vegetarian. But I also read that probiotics are heat-sensitive - won't heating them kill the live cultures? Am I wasting my time?
Good point @HealthHacker753! That's a common concern. Probiotics are indeed killed at high temps. If you're using a heat-sensitive probiotic, you can add it after the mixture cools a bit, but then it won't set as well. Alternatively, use a shelf-stable probiotic strain. Or consider making a two-layer gummy: base layer with vitamins, then a probiotic layer on top using agar that sets at lower temp. Just a thought!
