Gummies turned hard & sugar bloomed - safe to eat?

Hey everyone! I've had a jar of probiotic gummies for a few months and they've developed a white coating (sugar bloom?) and they're hard as rocks now. They don't look appetizing but are they still okay to consume? They haven't expired but the texture is off-putting. Any advice?

Hi! As a research librarian, I've looked into this. The white coating is indeed sugar bloom, which happens when moisture evaporates and sugar recrystallizes. It's not harmful but indicates the gummies are stale. The hard texture might make them less pleasant to chew, but they should still be safe unless there are signs of mold or off odors. If they don't smell bad, they are probably fine to eat, but you might want to consider getting a fresh batch for the best probiotic efficacy. Humidity can degrade the probiotics over time, so if they're old, the live cultures might not be as potent. Store them in a cool, dry place next time!

I had the same problem once! I used a dessicant packet in the jar to keep them fresh. But for safety—if they've been stored in a humid environment, there's a small chance of bacteria. If they taste off, don't risk it. You could also blend them into a smoothie to mask the hardness, that works! But honestly, probiotics are sensitive, so I'd buy new ones. It's not worth the money saved for potential stomach issues. Also, check the label for an expiration date that might be sooner than you think.

Yeah, I agree with Holly and Hacker. I've traveled a lot with gummies and they've bloomed but still worked. I even researched that sugar bloom is basically just sugar crystals - safe. But hard texture? Could be because they lost moisture. You can try to soften them by placing a piece of bread in the jar for a day or two, but that might introduce moisture. I'd say, if they don't have mold and smell normal, they're probably fine. But if you're still not comfortable, ditch them. Better safe than sorry! What do they taste like? Sometimes they get a weird flavor.

Thanks for the input! They taste okay, just hard to chew. I tried one and it was like a rock, lol. I'll probably just toss them and get new ones. I didn't think about the probiotic effectiveness degrading, so that's a good point. I'll store the new ones in a better place. Thanks everyone for the help!
