Homemade probiotic gummies - need help!
Hey all, so I tried making my own probiotic gummies at home using gelatin and some vitamin C powder. They set ok but they have a weird texture - kind of rubbery and they taste like... well, not good. Any tips for making them taste better and have a softer texture? I'm a busy guy so I want to make a batch that lasts a week without going bad.
Hey Mike! Making your own gummies is tricky. The rubbery texture is often from too much gelatin or not enough liquid. For softer gummies, try reducing gelatin by about 25% and increasing the liquid slightly. Also, make sure to let them set in the fridge, not at room temp. For taste, you can add a bit of honey or stevia, and maybe some fruit juice like orange or berry. Vitamin powders can be bitter, so you need to mask that. I'd also suggest using a mold with smaller shapes so they're easier to chew. What type of probiotic are you using? Some are heat-sensitive.
Yo! I've been meditating on this topic for a while, and I've found that using agar instead of gelatin is better for vegans and gives a nice texture. But if you're using gelatin, make sure you bloom it properly in cold water before heating. Also, don't boil it - just warm it enough to dissolve. For taste, try adding some fruit puree (like strawberry or mango) and maybe a teaspoon of lemon juice. That helps the flavor. And don't forget to keep them in an airtight container in the fridge. Mine lasted about two weeks but I had to eat them quick. Good luck!
Thanks for the tips! I might try the agar route since I'm trying to eat less animal products. Also, I'll definitely use less gelatin and add some fruit juice. My batch was definitely too rubbery. For probiotics, I used a powder that says it's shelf-stable, so heat might not be an issue? But I'll be more careful about temperature. Maybe I'll try a smaller batch first. Appreciate it!
