Help! My DIY sea moss gummies turned into a slimy mess

Has anyone tried making sea moss gummies from scratch? I used agar and a store-bought vitamin powder but they came out slimy and barely set. Any tips on getting that perfect chewy texture without corn syrup?

Oh boy, I've been there! My first batch was like seaweed jello 🤢. I find using a combo of gelatin and agar works best – about 2 tsp gelatin + 1 tsp agar per cup liquid. Also, make sure you bloom the gelatin in cold water first! And don't skip the dehumidifying step – let them sit out on a rack for a day.

I've had good luck with just agar, but you have to boil it for a few minutes and then let it cool slowly. Also, vitamin powders can throw off the pH and mess with setting. Try adding a squeeze of lemon juice next time – the acidity helps agar set firmer! I also use silicone molds, not metal.

Pro tip: use a candy thermometer! Keep the mixture at 220°F (104°C) for a minute before pouring. Also, pour through a fine mesh strainer to remove air bubbles. And if you want that firm gummy texture, add a tablespoon of tapioca starch dissolved in water. Just don't use too much or it gets chewy like gum.
