Homemade Sea Moss Gummies: Keep Turning Into Goo?

Yo, tried making my own sea moss gummies with gelatin and some powder blend. They set fine in the fridge but then turned into a slimy mess at room temp. Any tips on what I'm doing wrong? I'm using like 2 tbsp gelatin per cup of liquid.

Likely not enough gelatin or your liquid is too acidic. Sea moss can be acidic. Try upping gelatin to 3 tbsp per cup, or use a blend of gelatin and agar. Also, check your powder's pH – some vitamin C powders can break down gelatin. Let me know the exact powder mix?

Agar's your friend if you want room-temp stable. I do half gelatin, half agar. Also, add a little citric acid for flavor but not too much. And don't forget to bloom the gelatin in cold water first. What's your process?

Thanks guys. I was just dumping gelatin into hot liquid... no bloom. Also using a generic vitamin blend with some vitamin C. I'll try the agar mix and blooming. Should I adjust the liquid amount if I add agar?

Agar needs different ratio – about 1 tsp agar per cup liquid. Also it sets faster. Reduce liquid by like 1/4 cup to compensate for the agar's gelling power. Let us know how batch two goes!
