Homemade gummy vitamin disaster: help!
Hey all! I tried making my own vitamin gummies using gelatin and a powdered multivitamin, but they came out like rubbery blobs with a weird aftertaste. Any tips on getting the right texture? I used 2 tbsp gelatin to 1/2 cup juice, heated then added the powder. Total fail.
That texture sounds like too much gelatin relative to liquid. General ratio for gummy bears is 1 tbsp gelatin per 1/2 cup liquid. Also, vitamin powders can be super bitter - try using a flavored electrolyte powder or add honey/stevia. And don't boil the gelatin, just warm it til dissolved.
Why not just buy gummy vitamins? They're cheap and already tested. Homemade ones probably won't have the right dosage anyway. Plus you're cooking vitamins which might degrade them. Just my two cents.
True, but I'm trying to avoid extra sugar and weird ingredients. PlantPat, I'll try less gelatin next time. Do you think agar would work better? I've heard it's more stable.
Agar can work but it gives a firmer, less chewy texture - more like jelly. You'd need to experiment. Also, some vitamins (like B12) are heat-sensitive, so maybe add those after the mixture cools a bit. Let us know if your second batch goes better!
