Hey everyone! I tried making my own Super Green Gummies at home with some spinach powder and vitamin C powder, but they came out super rubbery and taste awful. I used gelatin, not agar, maybe that's why? Any tips for a newbie? I want to avoid all the added sugar in store-bought ones.

Hey Nancy! The rubbery texture might be because you used too much gelatin or didn't let it bloom properly. I've been making paleo gummies with beef gelatin and a little honey. For green gummies, I use spirulina instead of spinach (less gritty). Make sure to sprinkle gelatin over cold water first, let it sit 5-10 min, then heat gently until dissolved. Also, don't add the vitamin C until the mixture cools a bit to avoid destroying it. Try a ratio of 1 tbsp gelatin per 1 cup liquid. What was your recipe?

I'm all for homemade, but honestly, I've tried and failed so many times! The trick is to use agar agar if you want a firmer gummy, but it can be finicky. For a beginner, maybe start with a simple fruit juice and no powder first to get the texture right. Also, if you're using vitamin powders, make sure they don't have a strong aftertaste. I used a vitamin C powder that was sour and it overpowered everything. Maybe add a bit of lemon juice and honey to balance.

Thanks guys! I used 2 tbsp gelatin for 1 cup of cold spinach juice, but it was lumpy and kinda separated. Also, I added the vitamin C powder while it was still hot. Maybe that's why it tastes weird? I'll try the blooming method and maybe add some mango juice for flavor. Should I use more or less gelatin if I want a softer chew?

For softer, use less gelatin, maybe 1.5 tbsp. Also, make sure to whisk the gelatin into cold liquid and let it sit, then heat slowly and stir constantly. And yes, adding vitamin C to hot liquid can mess with taste. Let it cool to below 100F (like warm to touch) before adding. Also, you can use a blender to get a smooth mixture.
