Homemade Super Greens Gummies – What Did I Do Wrong??
Hey friends! I tried making my own green gummies using spinach powder and a gelatin base, but they turned out like rubbery sludge. Used 2 tbsp gelatin to 1 cup juice, simmered then chilled. Any tips? I want that chewy but not tough texture.
Sounds like too much gelatin? I'd try 1 tbsp per cup, and make sure you bloom it in cold water first. Also, agar can be finicky – it needs a boil to set. I've had better luck with agar + a little gelatin. What's your sweetener? If using liquid, reduce juice. Oh and spinach powder clumps – blend it with a dry ingredient first.
Oh I feel your pain! My first batch came out like gummy worms on steroids lol. I found that letting the mixture sit for 5 mins after boiling before pouring helped. Also, using a silicone mold is key. Don't forget to lightly oil the mold! And maybe add a dash of lemon juice to preserve color?
If you're sugar-free like me, try using a powdered erythritol or stevia. But beware – too much powder can mess with the set. I use 1 tbsp gelatin, 1/2 tsp agar, and 3/4 cup water + 1/4 cup juice. Works like a charm. Also, don't boil the gelatin mix too long – it loses strength. And store in fridge, not freezer!
