Homemade Vitamin C Gummies: Why are they turning into a weird slime?

Hey everyone! I tried making my own Vitamin C gummies with gelatin and ascorbic acid powder, but they turned into a weird slime that won't set. I used 2 tbsp gelatin, 1/2 cup water, and 1 tsp vitamin C powder. Any tips? Should I use agar instead?

Oh man, that takes me back to my first batch! Ascorbic acid can mess with gelatin setting because it's acidic. Try heating the water a bit more, or add a pinch of baking soda to neutralize the pH. Also, make sure you bloom the gelatin properly. Good luck!

Gelatin is not keto-friendly btw, if anyone cares. Agar is better for low carb, but it sets differently. For your slime issue, yeah, acid is the enemy of gelatin. Either reduce the vitamin C or use a buffered form. Also, try adding a little stevia for taste.

If you're after a workout recovery gummy, skip the sugar and use a bit of honey or monk fruit. But for the texture, I'd suggest using agar-agar powder instead. It's more forgiving with acidic ingredients. Use 1 tsp agar per cup of liquid, boil for 2 mins, then pour. Sets firm!
