Vit C gummies turned rock hard – safe to eat?
Hey everyone, I bought a big jar of Vitamin C gummies a couple months ago and now they've all turned hard as rocks. Some have white spots on them (sugar bloom?) and a few are stuck together. The expiration date is still a year away. Are they still safe to eat? Or should I toss them? They were expensive and I hate to waste, but I don't want to get sick either.
Oh I've seen this with my kids' gummies before! Typically it's just sugar crystallizing from temp changes. If they don't smell funky or moldy, they should be ok to eat. But honestly if they're hard I'd just toss them – not worth choking or damaging teeth. Maybe invest in some airtight containers and keep them in a cool dark place next time. Our family switched to the NOW brand and they stay soft forever.
From a food science perspective: sugar bloom is harmless – it's just sugar recrystallization. The hardness is probably moisture loss. As long as there's no off smell or taste, they're safe. But texture will be like eating gummy stones lol. I had a bag that turned into one giant clump – I just broke them apart and ate them over a week. No issues. Pro tip: keep a silica gel pack in the jar to absorb excess moisture.
